How To Make White Rice and Stew
Nigerian White Rice and Stew is one of the most popular Nigerian Food. Rice recipe is common because it can be eaten with any stew or sauce of your choice. Chinwendu Ann White rice and Ofe akwu.
Ingredients:
Palm fruit
Meat
Fresh fish
Stock fish
Crayfish
Onions
Fresh pepper
Stock cube
Ehulu
Okpei
Dried ginger and garlic
Cent leave
Ugu
Salt to taste.
Method:
Cook your palm fruit till tender, wash and set aside.
Wash and cut your cent leave, ugu and onions.
Pound your ehulu, okpei dried ginger and garlic together.
Pound fresh pepper and crayfish together.
Cooking direction:
Parboil your white rice, wash and cook till tender
Put your palm fruit extract on your cooking gas, cook till it thicken to a consistency you like for your stew.
Add your cooked meat and stock.
Add your pounded crayfish and pepper.
Add your pounded ehulu, okpei, dried ginger and garlic leave to boil very well.
Add your cent leave and ugu, leave to simmer for 2 minutes.
Your banger stew is ready
Serve with white rice.

Nkiru Nwobu Ekwunife Veggie Rice and Chicken Coconut Curry Sauce
Incase ure thinking of what to prepared for your loved ones tomorrow while not try out our gizzard and kidney sauce ?
Ingredients:
Washed and Cut Chicken in desirable size
Slice, washed and chopped beef also in desirable size though optional
Carrot
Green sweet pepper
Garlic (I used the powdered one)
Ginger (I made used of the powdered one)
Corn flour optional though I made used of Irish potato
Bouillon Cubes
Salt to taste
Curry
Thyme
Vegetable oil
Onions
Water
Spices
Coconut, break from shell using knife, slice and blend with water and extract the milk
Suya pepper ie (Optional which I used to marinate chicken and chopped beef
Procedures:
Cut chicken and beef in desirable size and washed, season with garlic, ginger, suya pepper, cubes etc and marinate for some minutes, hours or overnight. Boiled marinated meat and allow to cooked for some minuted and set aside. Heat up your vegetable oil ie in a little quantity and pour in your washed slice vegetables which include carrots, sweet pepper, peas, beans and slice onions and stir fry using thyme, curry and bouillon cubes. Remove your veggies from the cooker, set aside and return your pot of meat to the cooker and still allow to cook to your satisfaction, pour in your extracted coconut milk, curry, bouillon cubes and salt to taste. check and correct seasoning if need be, add your grinded cooked Irish potato to your sauce for thickener or mixed your corn flour with water to make a paste and add to the sauce. Stir well, taste to check if the taste is to your satisfaction, allow to cook for some minute so as to thicken. Add your stir fry veggies, stir and allow to cook for some minute and bring down immediately. You can serve with white rice, boiled yam etc

WHITE PEPPER

GARLIC
CORN FLOUR FOR THICKENING
PREPARATIONS
WASH AND PARBOIL YOUR RICE
STEAM YOUR CHICKEN WITH CURRY, THYME, BENNY CHICKEN SPICE, ONIONS AND SET ASIDE
CUT YOUR CARROT, CABBAGE, GREEN PEPPER AND GREEN BEANS
PUT YOUR FRY PAN ON THE FIRE AND FRY YOUR VEGETABLES FOR SOME MINUTES, ADD YOUR CHICKEN STOCK AND DONT ALLOW IT TO OVERDONE AND THICKEN IT WITH CORN FLOUR

Stella Emejuo Recipe for the white rice: rice, water and salt
Recipe for tomatoes stew: fresh tomatoes, fresh shonbo, fresh pepper, onions, vegetable oil, salt, nor Maggie, ginger,Notmeggi, goat meat and water.
METHOD for rice:
Put a measured pot of water on the fire, wash the raw rice with normal water then put it in the pot of water for parboiling. Leave it to boil for about 10 minutes, bring it down and turn it into a sieve then u place another measured pot of water on the fire. Wash the rice and turn it into the pot, add a measured salt then allow to get cooked.
METHOD for stew:
Wash your shonbo, tomatoes, pepper and onions and blend all together.
Boil the blended recipe to dry water.when the water has dried,
Place a pot on the fire and add a measured quantity of vegetable oil.
Add salt to the oil and slice two onions And add to it. Add the dried recipe and fry ; while frying, add Maggie and notmeggi. Allow to dry. Parboile the meat and add to the sause. Allow to boil. Thank you.

I love stew with rice and all these are great options to cook and relish. Coconut I feel, adds that specific flavour to the dishes and it tastes great.
