How to prepare Akidi and Abach Akidi

I recently visited a family member and she requested i prepare Abacha for her before i leave, and not any other Abacha, but Abacha Akidi. Knowing also how much she loves Akidi, i decided to kill two birds with one some by making two separate dish for her, being an Anambra lady, these dishes are not that common to her people so she always make me prepare some unique Enugu food for her each time i visits. Abacha Akidi is not common and you can never see it being sold in a restaurant or any Abacha joint in Enugu or any other City.

Below are the recipe for both Dishes and Procedure for preparing them.

  • Palm oil
  • Ugba
  • Fried Pepper
  • Salt
  • Crayfish
  • Seasoning
  • Fried fish

How to prepare Akidi and Abach Akidi

After cooking the akidi, put your put in the fire and add a little water, around half cup. allow it to boil a little and then add both oil and Ugbo(oil bean). Allow it to cook so that the water, the oil and the ugba can mix together. then add your salt, pepper, seasoning i prefer (Knorr or Royco) and then crayfish, if you have kpomo you can also add it. Turn and taste for ingredients and if everything is to taste. Add your Akidi and turn. Before you dish makes sure to still check especially for sail.

Abacha Akidi

How to prepare Akidi and Abach Akidi

  • Abacha
  • Palm oil
  • Ugba(Oil Bean)
  • Fried Pepper
  • Ehuru(Calabash Nutmeg)
  • Kpomo
  • Fried fish
  • Salt
  • knorr Seasoning

Procedure for preparing Abacha.
Soak the Abacha in hot water for a while but avoid it being too soft, this is only if you are using dried Abacha, but for this pattern of Abacha, its ideal to use the dried one instead of the fresh Abacha.

After the Abacha must have softened, put it in a sieve and allow the water drain, then put the Abacha in a pot or bowl.

After you must have readied your ingredients, Put your put in the fire and add a little water, allow it to boil a little and then add both oil and Ugbo(oil bean). Allow it to cook so that the water, the oil and the ugba can mix together. then add your Akidi, salt, pepper, seasoning, Ehuru, crayfish and then turn, After then Add your Abacha.. After that turn(steer) it very well for the ingredients to mix. Taste to make sure everything is to taste, and if it is, then your Abacha Akidi is ready to be served.

    Never had Abacha and never heard of Akidi before. My fave Igbo food is nkwobi and it’s what I miss. I still eat it here but it’s not the same.
